Baking Avenue - Melon Cupcakes

No hay domingo de verano sin el melón de postre, verdad?? Y no hay verano (ni invierno, primavera, otoño… mes) en que yo no haga cupcakes (aquí, aquí, aquí y aquí podéis ver los de los veranos anteriores)… Aish, en fin que están riquísimos!!!



There´s no summer without Melon, isn´t? And there´s no summer (and Winter, autumn, spring… month) without me baking cupcakes (here, here, here and here you can have a look to the ones from previous years)… Aish, what can I say?? They are just delicious!!!
 


Ingredientes / Ingredients


60 ml aceite oliva suave / 60 ml olive oil

150 gr azúcar / 150 gr sugar

2 huevos / 2 Eggs

90 gr puré de melón / 90 gr mashed melon

150 gr harina / 150 gr flour

½ cdita polvo de hornear / ½ tsp baking poder



Cheesebuttercream


250 gr azúcar glass / 250 gr icing sugar

120 gr mantequilla / 120 gr butter

130 gr crema de queso (tipo Philadelphia) / 130 gr cheesecream

Precalentamos el horno a 180° C y preparamos nuestras cápsulas

Preparamos el puré de melón en la batidora.

Tamizar la harina con la levadura y reservar.

Batimos el azúcar con los huevos. Una vez la mezcla haya adquirido un color naranjita crema, añadimos el aceite poco a poco sin dejar de batir.

Añadir el puré de melón y la harina (previamente tamizada con la levadura)

Repartir la mezcla en las cápsulas y hornear aprox 20-22 minutos o hasta que al pinchar la masa, el palito de madera salga limpio (no abrir el horno antes de los 20 minutos)

Dejar enfríar mientras preparamos nuestra “Cheesebuttercream”.

Tamizar el azúcar glass y batir junto con la buttercream (temperatura ambiente) y el queso crema (frío).

Una vez fríos los cupcakes, los decoramos con la ayuda de una manga pastelera y una boquilla (yo, como siempre, usé la 2D Wilton  - tengo más boquillas pero esta es mi favorita jejeje-)

Por último, decorar al gusto. Yo utilicé un utensilio (de Ikea) para hacer bolitas con la fruta (no sé si tendrá más usos…)




Preheat the oven 180°C and prepare the capsules.

Prepare the mashed melon.

Sift the flour and baking powder and put aside.

Mix the sugar with the eggs until they both are incorporated and the mix has a creamy consistence (soft orange/creamy color). Add slowly the oil.

Add the mashed melon and the sifted flour and baking powder.

Split the mix into the capsules and bake during 20-22  min or until the woodstick comes out clean (do not open the oven before 20 min).

Let them cool down while preparing the “Cheesebuttercream”.

Sift the icing sugar and mix it with the butter (room temperature) and the creamcheese (cold)

Once our cupcakes are cold, we decorate them with a pastry bag and a nozzle (I used, as always, my beloved 2D Wilton).

To end up, we add little melon balls using our imagination or as we like (I used a tool bought in Ikea to make fruit balls).
